ICHIDO fine bubbles is created by Secondary fermentation (known as champagne manufacturing method). By fermenting in the bottle, a fine and soft foam is produced. The result is an artful fusion of time-honored sake brewing techniques along with traditional champagne-making methods that is anything but traditional.

We conducted tasting tests with over 500 international tasters, and invented a secret recipe for a new sake that will make everyone around the world smile! Over the course of three years, we have communicated with customers locally and internationally to develop a clear tasting sake that pairs easily with dishes around the world.

Our brewery is located in the scenic valleys of Tohoku in Northern Japan. We produce sake from local rice grown in this ideal climate and pure water, rich in minerals, from Mt. Abkuma. Using only hand-crafted and all-natural Japanese ingredients – pure spring water, koji yeast, and rice – ICHIDO Japanese Sparkling Sake is an effervescent and expressive experience like nothing else.

Japanese sake consists of elements that are indispensable for the human body: sake contains about 10 times more amino acids than wine, ferulic acid that suppresses melanin production, adenosine that promotes blood circulation, and peptides that support blood pressure control and memory improvement. ICHIDO does not use any additives and keeps ingredients naturally produced during the fermentation process to the maximum.

Led by a female Japanese entrepreneur, we set out to craft a premium sparkling sake that would challenge the preconceived notions of both traditional sake and sparkling wine – something a little different, for those who pride themselves on living their lives a little differently.
