ICHIDO is particular about foam and adopts the most time-consuming secondary fermentation in the bottle, which is also called the champagne manufacturing method from among many types of foam manufacturing methods. When mash is squeezed and fermented in a bottle, the generated carbon dioxide loses its place and naturally dissolves in the sake, creating silky, fine and gentle bubbles.

The brewer is the long-established sake brewery "Popular Sake Brewery" founded in 1897 in Nihonmatsu City, Fukushima Prefecture. We are particular about handmade and ginjo, and continue to make sake with new values and uniqueness while preserving tradition. The raw materials for ICHIDO are the clear underground water of Mt. Adatara, and the sake rice from Tohoku, which has been cultivated in a rich climate. For the koji, which is the decisive factor for the taste, we selected the local koji that comes perfectly with the ingredients. Using wooden tools and steaming in a Japanese kettle, we spared no effort and time to finish it to the best taste.

Sake contains about 10 times as much amino acids as wine, which are indispensable for making a human body, ferulic acid that suppresses melanin production, adenosine that promotes blood circulation, peptides that support blood pressure control and memory improvement, etc. Contains many ingredients that support health and beauty. 50 years have passed since the 1970s, when sparkling was hated to cause abdominal pain, and Japan has become the world's third largest champagne country. The secret to success was to properly convey the goodness of champagne to consumers. On the other hand, it has been more than 20 years since the birth of sparkling sake. The ICHIDO project was launched by six members I met in Chicago, USA.
I want to make sake more familiar overseas by letting people know how to taste and enjoy sake. And I want to convey the charm of sake that I haven't known yet to the next generation of Japanese people. The project was started to embody such feelings. We will transform traditional sake made by craftsmanship into a new value experience with an unprecedented idea. Friends who sympathize with our thoughts are joining one after another, and new ideas are born every day. The challenge of ICHIDO is still in its infancy.
